Running through April 2025, the hotel will host Chef Eyal Shani’s celebrated Mediterranean restaurant, HaSalon, for an exclusive pop-up. Known for blending bold flavors and pure, locally sourced ingredients, HaSalon’s Aspen outpost will feature a dynamic dining experience that transitions from intimate, music-filled dinners to lively evenings filled with dancing and high-energy cuisine. Signature dishes like charred beetroot carpaccio, baby potatoes with Osetra caviar, and ricotta clouds will highlight Chef Shani’s inventive approach to Mediterranean gastronomy.
Additionally, W Aspen will unveil HIDALGO, a permanent bar concept helmed by cocktail visionary Dushan Zarić, the mind behind the iconic Employees Only bars. Located in the hotel’s lobby grotto, HIDALGO will focus on handcrafted agave-based cocktails like the “Improved Margarita” and “Yellow Jacket.” With Zarić’s renowned creativity, HIDALGO promises to be a sophisticated yet vibrant destination for cocktail enthusiasts, operating Thursday through Monday from 6 PM onwards.
